Enzymatic Sucrose Analysis - A Modified Cu(Il) Reduction Method

Analysis of sucrose has been carried out spectrophotometrically by a modified Lane-Eynon*s Cu(II) reduction method. Invertase enzyme has been used to hydrolyse sucrose and the obtained reducing sugars employed to convert Copper(ll) to Copper(l), absorbance of unreacted Cu(lI) was measured spectrophotometrically. The method is simple, accurate and avoids titrations.
