The storage effect of the clove plant harvested from Zanzibar (east coast of Africa) was studied through determination of the physical and chemical properties of the clove sample (flower bud) and the physicochemical properties of the volatile oil extracted from two samples of clove fresh and stored. The activity of the clove oil towards the bacterial growth was investigated and it shows that the oil acts as antiseptic and bactericidal substance against the bacteria and finally the active ingredient in the volatile oil which is the Eugenol was extracted and its percentage in the fresh and stored samples was determined.
KEYWORDS:Clove plant; Eugenia caryophyllata; Eugenol; Clove bud oil
